Ingredients:
For the Marination:
500g chicken, cut into pieces
1 cup yogurt
1 teaspoon ginger-garlic paste
1 teaspoon red chili powder
1/2 teaspoon turmeric powder
Salt to taste
For the Rice:
2 cups Basmati rice, soaked for 30 minutes
4-5 cups water
2-3 green cardamom pods
1-2 cinnamon sticks
4-5 cloves
Salt to taste
For the Biryani:
2 large onions, thinly sliced
1/2 cup cooking oil
1 teaspoon cumin seeds
2-3 green chilies, chopped
1/2 teaspoon garam masala
1/2 teaspoon cumin powder
1/2 teaspoon coriander powder
A dash of saffron strands (ingested 2 tablespoons of warm milk)
For Garnish:
Fresh coriander leaves
Fresh mint leaves
Fried onions
Process:
- In a bowl, marinate the chicken with yogurt, ginger-garlic paste, red chili powder, turmeric powder, and salt. Let it sit for at least 30 minutes.
- In a colossal pot, heat water with the eventual result of bubbling. Add doused rice, cardamom cases, cinnamon sticks, cloves, and salt. Cook the rice until it's 70% cooked. Drain and set aside.
- In a separate pan, heat cooking oil. Fry the thinly sliced onions until they are golden brown and crispy. Remove and set aside.
- In the same pan, add cumin seeds and green chilies. Sauté for a minute.
- Add the marinated chicken. Cook until the chicken is delicate and the oil isolates.
- Sprinkle garam masala, cumin powder, and coriander powder over the chicken. Mix well.
- In a separate small bowl, soak saffron strands in warm milk.
- In a large, heavy-bottomed pot, layer the partially cooked rice, followed by the chicken masala, and a few fried onions. Repeat this layering process.
- Drizzle the saffron-infused milk over the top layer. Garnish with fresh coriander leaves, mint leaves, and the remaining fried onions.
- Cover the pot with a tight-fitting lid and cook on low heat for 20-25 minutes to allow the flavors to meld.
- When gotten done, gently pad the biryani with a fork.
- Serve hot, accompanied by a raita or salad.
